Homemade Yogurt



Yogurt/Curd/Tairu/Dahi is very healthy and rich in protein, probiotic and essential nutrients. Its a good body coolant and is a very important part of Indian meal and used in lots of dishes We can make yogurt with different kinds of milk such as cow , buffalo or goat. I am using Organic A2 whole milk. You can pick your dairy which you are comfortable with. Fat free or low fat or whole milk. Based on the fat content the thickness may differ.


Recipe

Our goal is to make yogurt with minimal effort and cleanup. Boiling milk on stove top can turn messy easily, milk protien will end up getting suck to the bottom of the boiling pan then we have to strain the milk and cleaning the pan is another story. So we are going to boil the milk in a heat proof container in the microwave. Boiling the milk directly in instant pot have 2 problems (1) when we transfer it after it doesn't look good and (2) cleaning the pot is harder


Prep time : 1 Min

Cooking time : 5 to 7 Mins


Ingredients

  1. 2 cup milk

  2. 1 tsp yogurt with active culture

You will need 1 tea spoon of yogurt [Buy the one which say have active cultures or get some from a friend who makes yogurt at home] TIP: Pick the best one you like. Taste and texture of your yogurt[end product] will taste like this culture.


Utensils Needed

  1. Microwavable container

  2. Microwave oven

  3. Whisk or fork

  4. Food thermometer [optional]

  5. Instant pot [optional]

Method

Step 1:

Take 2 cups of milk in a heat proof microwavable bowl or a container and cook it in the microwave, depends on your microwave it will take between 5 to 7 mins to boil. It will bubble and raise up, you can stop it at that point. Be careful while taking the milk out of the oven. It will be very hot. TIP ;1) Start with 4 mins and then add 1 or 2 mins and watch it carefully. 2) if you are using fat free milk let it bubble up for 1 or 2 mins more, less fat milk will not bulbble over fast like whole milk and this step will help you get a thicker yogurt.


Step 2:



Whisk the milk till the top is completely covered with bubbles. this will prevent the thick milk layer on the top and let it cool for 20 to 30 mins.


Step 3:





Now check the temperature just dip your finger in the milk, it should be lukewarm not like a burn or in the thermometer 70° to 75° F or 21° to 24° C. If its colder than that put it back in the microwave for 30 to 40 secs to reach the desired temperature. Whisk the cultured yogurt into the milk.


TIP: keep the 1 tsp yogurt in the room temperature for better results. Keep it outside the refrigerator when you start boiling the milk.


Fermenting process

Instant pot:



Add 2 cups of warm lukewarm water in your instant pot and put your container inside it. Select yogurt option and set it to 8 to 12 hours, depends on how sour you want it. More time it ferments more sour it will be,


Other ways:

I) Place this in a warm place away from direct sunlight, Ideal is 75°F.


II)If you live in a cold place

  1. Preheat your baking oven to 100°F

  2. after its preheated turn the oven off and place your container inside and turn on the light. Let it sit for 10 to 12 hours. The heat from the light will help set the yogurt.

Note: We are using the same microwavable heat proof container from the beginning to end.

After fermenting put a lid on and store it up to 2 weeks in your refrigerator . Enjoy healthy yogurt of your choice !!
