Kimchi Cauliflower Fried Rice
Fried rice is a delicacy which is enjoyed by people around the world. In this world famous recipe we are substituting rice with cauliflower rice. Cauliflower rice is gluten and grain free. Good for keto diets and an additional dish for diabetic people. Kimchi is a probiotic which improves digestion and gut health and brings in the tangy and spicy flavor to the dish.
Recipe:
Serves 2 People
Ingredients:
Cauliflower rice (uncooked) - 2 Cup
Kimchi - ½ Cup
Soy sauce - 1 tbsp
Kimchi Juice - 1 tbsp
Chilli sauce - 1 tsp [ add or reduce as per taste]
Garlic minced - 2 clove
Cane sugar - 1 tsp (optional)
Sesame oil - 2 tbsp [ Can replace with Olive oil or Vegetable oil]
Chopped Shallots ¼ cup [Can be replaced with Onions]
Spring onions [optional]
Diced mixed vegetable of your choice - 1 Cup
Salt to taste
Steps:
Squeeze the Juice from Kimchi and cut into thin slices and keep juice separate.
To that juice add soy sauce, chilli sauce, cane sugar and kimchi juice and mix well. This will provide a uniform flavor spread equally in the dish.
Use a mid-sized wok or tawa which can hold 4 cups.
Add 1 tbsp of sesame oil to the tawa in medium-high flame and roast sliced kimchi. After kimchi turns golden color add minced garlic and roast till it turns golden . Remove the mix from tawa and keep it aside.
Add 1 tbsp of sesame oil into the heated tawa and add chopped shallots, diced vegetables and salt for the vegetables. Saute it for a couple of minutes till it loses the raw smell, cruncher the better. Sprinkle water if you want it more cooked.
Make a hole in the middle (Move the vegs away from the center) add the sauce mixture in the middle and immediately add cauliflower rice and salt required for cauliflower rice [Be mindful with salt as soy sauce and chili sauce will have lots of salt and its best to start with ½ required salt and add more later if necessary].
Mix it well in high flame till the rice absorbs all the sauce and looks dry.
Turn off the flame, add roasted kimchi garlic mix and chopped spring onions and mix well .
