Sweet Potato Donuts

Donuts are everyone's favorite, especially kids. It is a challenge to make kids eat vegetables. They think vegetables are for grownups not for us kids. When mom or dad says vegetables are very healthy for you and give you energy and muscle. Kids respond “i already have lots, you just asked me to stop running remember?”. That happens almost everyday. Over the years I figured out a few tricks to sneak in some vegetables. One of those is Donuts.

Recipe

Makes 12 Small 2 inch Donuts.


Prep Time 10 mins

Cooking Time 15 mins


Ingredients

Dry :

All purpose Flour - 1 Cup

Nutmeg powder - ½ tsp

Cardamom powder - ¼ tsp

Salt - ½ tsp

Baking powder - ½ tsp

Wet:

Boiled and mashed Sweet Potato - ½ Cup

Thick Yogurt - 2 tbsp

Ghee or Melted butter - 2 tbsp [For Vegan : Can substitute with any cooking oil]

Vegetable oil or Any non bitter oil to fry - 1 to 2 Cups

Honey or Maple syrup - 2 tbsp [optional]


Utensils

Deep pan to fry

Large mixing bowl

Spoon or Pastry brush.


 

Preparations

Step 1 : Lets get out Sweet potato ready

Steam or boil sweet potato and mash them.


Step 2 : Lets start to make the Dough

Take a large mixing bowl and mix all the dry ingredients.










Step 3 :

Add ghee or melted butter to the dry ingredients and mix it well. This step is optional. Ghee or melted butter, adds a nice rich flavor




Step 4: Mix the wet and dry ingredients

Then add Sweet Potato and Yogurt to the mixture and knead it well to make a non sticky dough. Add a little bit of flour or water accordingly to make a non sticky dough. Consistency might vary depending on the sweet potato consistency.





Step 4: Kneaded Dough


Let the dough rest for 20 mins









Step 5: Time to Shape our Donut



Portion the dough into 2 equal halves. Keep dividing them until u get your desired size. This way we will get even sized donuts







Step 6: Time to fry


Deep fry them in a medium flames, flip every 2 minutes till it's nice golden brown



Step 7: Let the donut cool down a bit, then we can glaze it

  • You can use Honey, Maple Syrup, Sugar Syrup to sweeten the donut. I personally like using Honey or Maple syrup.

  • Take a pastry brush and brush it over the donut or use a spoon to pour it on top.

  • Choose any glazing of your choice. Melted chocolate or Caramel or Sprinkles. [Optional]

  • This is the most difficult part of this recipe, Let it rest it for 10 to 20 mins for it to absorb the syrup or honey. Tip: Its hard to wait, You can poke holes after frying so you don't have to wait 20 mins for it to absorb

Now it's time to enjoy.
